A dazzling celebration of Palestinian cuisine, featuring more than 80 modern recipes, captivating stories and stunning travel photography.
"Yasmin Khan draws on her vast experience as a storyteller, cook, human rights activist, itinerant traveler and writer to create a moving, empathetic, hugely knowledgeable and utterly delicious book." ―Anthony Bourdain
Yasmin Khan unlocks the flavors and fragrances of modern Palestine, from the sun-kissed pomegranate stalls of Akka, on the coast of the Mediterranean Sea, through evergreen oases of date plantations in the Jordan Valley, to the fading fish markets of Gaza City.
Palestinian food is winningly fresh and bright, centered around colorful mezze dishes that feature the region’s bountiful eggplants, peppers, artichokes, and green beans; slow-cooked stews of chicken and lamb flavored with Palestinian barahat spice blends; and the marriage of local olive oil with earthy za’atar, served in small bowls to accompany toasted breads. It has evolved over several millennia through the influences of Arabic, Jewish, Armenian, Persian, Turkish, and Bedouin cultures and civilizations that have ruled over, or lived in, the area known as ancient Palestine.
In each place she visits, Khan enters the kitchens of Palestinians of all ages and backgrounds, discovering the secrets of their cuisine and sharing heartlifting stories.

"I like this cookbook. It is very informative about the struggles of the Palestinians and their lives under occupation. However, their food is exquisite and simple to follow. Some bean recipes I would cook, because I do not like too many beans ha ha! I love their chicken, lamb, and seafood dishes and they are so easy and straight forward. I will make many of these dishes for myself as well as for my dinner guests. Laverne"

- I highly recommend this cookbook. I bought it because I was interested in her viewpoint as a human rights activist, but I was delighted to discover the recipes are a fresh take on making healthy food that is gorgeous, tasty and easily made for quick weeknight dinners as well as company best.
- Reviewed on NPR and author spoke of her creative product. Wonderful recipes. Her favorite was the first one I had made. So easy and delicious.
- Absolutely LOVE this book! It brought me right back to my time in Palestine from the very first pages! The mussakhan recipe is my go-to now!

- The book is a beautiful love letter to Palestine and artfully assembled with photos and stories to weave together the recipes. There is really something for everyone, super tasty vegetarian and vegan recipes and wonderfully spiced meat dishes. Also great to learn about new grains and their historic origins in Palestine. I would recommend this book to anyone and it also would make a wonderful gift! It's filled with alot of love. Thank you, Yasmin! Can't wait for the next one ;)
- Lovely recipes and I love the idea of getting to know a people through their food. We have tried a few recipes since purchasing and like the nuanced difference from other middle eastern food that we eat and cook. The book is beautiful, although that wouldn’t matter if the recipes were not also delicious. Thank you for this collection, and thanks to NPR for drawing my attention to it! We have a vegetarian in the house and there are so many recipes to satisfy both his tastes as well as some meat for me!
- I love this book! I was apprehensive when I first read that the author is not Palestinian, but her insight into the culture and cuisine was spot on!
- Okay, this is technically a cookbook, and a good one. I've tried two recipes since I received it and both got 5 stars in my book. BUT this book is also a primer on Palestine AND something you might be tempted to leave on your coffee table. Buy it. Read it. Cook with it.
